Quick Spanish-Style Chorizo Rice & Sausage

Ingredients

  • 1 cup uncooked rice (short or long grain, Basmati or Jasmine)
  • 1 tbsp olive oil
  • 4 links Spicy Chorizo turkey sausage, cut into slices
  • 1 red bell pepper (diced)
  • 3 green onions, sliced, whites and greens separated
  • 2 cloves garlic, minced
  • 1 3/4 cup chicken broth or water
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin (optional)
  • salt and pepper to taste
  • fresh parsley or cilantro (for garnish, optional)

Directions

  • In a large skillet or saute pan, heat olive oil over medium heat. Add turkey slices and cook for 3 to 4 minutes until browned.
  • Stir in red bell pepper, green onion whites and garlic. Cook for another 2 to 3 minutes until softened and fragrant.
  • Stir in rice, smoked paprika, cumin (if using), salt and pepper. Let the rice toast for about 1 minute in the oil for extra flavour.
  • Pour in chicken broth or water. Stir once, bring to a boil then reduce heat to low. Cover and simmer for 15 to 18 minutes or until the rice is cooked and liquid is absorbed.
  • Turn off the heat and let the rice sit, covered, for 5 minutes. Fluff with a fork.
  • Stir in green onion tops. Garnish with chopped parsley or cilantro.
