Maple Chipotle Chicken Fajita Bowl with Chipotle Lime Crema

Ingredients

  • 2 packages Rossdown Chipotle and Maple Syrup Skewers
  • 1 red bell pepper sliced into 1/4" thick strips
  • 1 green bell pepper sliced into 1/4" thick strips
  • 1/2 yellow onion sliced into 1/4" thick strips
  • 2 ripe roma tomatoes pulp removed, sliced into 1/4" thick strips
  • 1 tsp Spanish smoked paprika
  • 1/2 tsp Mexican chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • 4 cups steamed rice
  • 2 tbsp green onion finely sliced
  • 2 tbsp fresh cilantro chopped
  • salsa to serve
  • guacamole to serve

Chipotle Lime Crema

  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 tsp onion powder
  • Juice and zest of lime
  • 1 chipotle pepper canned
  • 2 tsp adobo sauce from canned chipotle

Directions

  • Preheat BBQ grill to medium-high.
  • For the Chipotle-Lime Crema, in a food processor or with a hand blender, puree all ingredients until smooth.
  • Grill skewers 8-10 minutes, turning often, until lightly charred and cooked to an internal temperature of 165 F. Keep warm while preparing remaining ingredients.
  • In a wok or large nonstick skillet set over high heat, warm vegetable oil and stir-fry onions and peppers until tender crisp and lightly blistered, about 5-7 minutes. Reduce heat to low and add tomatoes, chili powder, paprika, garlic powder and cumin, cook another minute, then remove from hea
