Black Garlic Chicken Bowl with Miso-Parmesan Dressing

Ingredients

  • 1 package Rossdown Black Garlic Chicken Skewers, grilled
  • 4 cups steamed rice ( about 1 1/2 cups uncooked)
  • 2 cups fresh baby spinach leaves
  • 1 cup cucumber diced 1/4" thick
  • 1 cup peeled edamame beans blanched and cooled
  • 1/2 cup radish thinly sliced
  • 4 jammy eggs
  • 1/4 cup scallions thinly sliced, green part only
  • 2 tbsp toasted sesame seeds

Miso Parmesan Dressing

  • 1/2 cup mayonnaise
  • 2 tbsp miso paste
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tsp Worcestershire sauce
  • 1 tsp fish sauce
  • 1 tsp dijon mustard
  • 1/4 tsp garlic powder
  • 1/4 tsp freshly cracked pepper
  • 1/4 cup freshly grated parmesan

Directions

  • To make the miso-parmesan dressing, combine all ingredients in a medium-sized mixing bowl and whisk until smooth.
  • In a small frying pan set over medium-high heat, warm vegetable oil and brown the black garlic chicken breast on one side, flip and transfer to oven. Cook until internal temperature reads 165 F when checked at its thickest point.
  • To make the jammy eggs, pierce the wide end of each with a clean thumbtack or pushpin. In a medium-sized pot with boiling water, lower eggs and cook for 7 minutes, stirring gently for the first 30 seconds. Immediately cool eggs in iced water or under cold running water. When cooled enough to handle, peel eggs then cut in half and set aside.
  • To assemble, make a base of half rice, half spinach in the bottom of 4 bowls and drizzle each with a couple tablespoons of miso-parmesan dressing. In neat rows or piles, arrange cucumber, edamame and sliced radish along with 2 halves of jammy egg and half sliced chicken breast in each bowl. Sprinkle with sliced green onions and toasted sesame seeds and serve with more miso-parmesan dressing on the side.
