Ingredients

  • 2 packages Rossdown boneless skinless turkey thigh
  • 4 strips bacon
  • 1/2 yellow onion, diced 1/4" thick
  • 4 cloves garlic minced
  • 1 1/2 cups low sodium chicken stock
  • 1 tbsp smoked papricka
  • 1 tbsp ground cumin
  • 2 tbsp tomato paste
  • 1/2 cup BBQ sauce
  • 2 tbsp Worcestershire sauce
  • 2 tbsp apple cider vinegar
  • 1x 14 oz can black beans drained and rinsed
  • 1 cup corn niblets
  • hot pepper sauce (optional)
  • finely sliced green onions (for garnish)

Directions

  • In a skillet set over medium-high heat, cook bacon until starting to brown and fat is rendered. Using a slotted spoon, transfer bacon to a slow cooker, leaving rendered fat behind. In the same pan, brown turkey breast on both sides and transfer to slow cooker. In the same pan again, add onions and garlic and sauté until fragrant. Deglaze pan with a splash of chicken stock and transfer to slow cooker along with paprika, cumin, tomato paste, BBQ sauce, bay leaf, Worcestershire sauce, apple cider vinegar and remaining chicken stock.
  • Set slow cooker to low and cook 6-8 hours or on high for 3-4 hours, adding corn and black beans halfway through. When turkey is tender and has reached a temperature of at least 165 F, use two forks to roughly shred meat. Season with a dash of hot sauce, if desired.
  • Garnish with finely sliced green onions and serve over steamed rice or mashed potatoes with fresh cornbread or a nice crusty baguette.
