Ingredients

  • 1 fresh egg
  • 1 - 2 tsp butter or oil
  • salt & pepper to taste

Directions

  • Heat a non-stick or well-seasoned pan over medium to low heat. Add butter or oil and let it melt and coat the pan evenly.
  • Crack the egg into a small bowl then gently slide it into the pan to keep the yolk intact.
  • Cook slowly until the white are fully set and opaque (2 - 3 minutes).
  • Season lightly with salt and pepper (if desired). Remove from pan and serve immediately.

TIPS & HINTS

  • Low heat is key - it prevents rubbery whites and keeps the yolk tender
  • Use fresh eggs if you can - they hold their shape better
  • For firmer yolks - cover the pan for the last 30 to 60 secs or flip briefly
  • For crispy edges - use a little extra oil and slightly higher heat
